I see mention of a few things below, in the comments. In reference to your candid, black and white and 'to the point' observations; THIS IS EXACTLY WHY WE COME HERE...!! The maze and merriment of the Thai visa process is confusing at best, we need someone who sorts the wheat from the chaff and gets rid of the noise, advice which gets to the point rather than being discussional and more confusing. Surely?

If applying for the 60 TV online then there will be fields in the application such as "Confirmation of lodgings", "Flight Number", "dates", "Proof of UK residency", "proof of finances", "ID card of invitee to Thailand" (where applicable). etc etc. I make an A4 sheet with the words "not applicable + my name and DOB/Passport number" in bold marker pen/or printer, prior to completing the application online, and where they ask for information or proof I just upload the sheet I mention above. Good Luck, the process is quite straight forward for most.
The rule changes clearly state that it is the airlines responsibility to check the Vax status of all inbound to Thailand. They will be vigilant because it's at their cost if your arrive and cannot comply.

Do you know, is the letter from the org essential or can a person just go to immigration to say they are concluding their volunteering? I think a letter is manageable, however if not essential required then obvs going direct is preferable.
