When I applied, I submitted a brand new contract, stating I was working remotely. The contract has been active for 3 years but the updated one I sent to the HK consulate was only 4 days old.

It had digital signatures too, as I wasn't going to wait for a contract to be mailed here from Europe 😅

you can't do that. After 6 months or so, the immigration officers can deny you entry at any time, because you're living in Thailand but using a tourist visa exemption solution.
