it's up to everyone to do what They think is ok. Anyone wants to take a chance tempting fate , ok.
Today, every border you go through , land or air .know exactly when and where you have been in and out of Thailand. You are on their list. As you said above, it depends on the immigration officer . It has often been reported, that going with one of the visa run companies gives you a better chance if you're on your 2 or 3 rd try . I don't do that myself, but must be easy to find out the companies that offer the surest service. I personally witnessed a bus with a few dubious tourists in Penang a few years ago, and they got their new visa same day as myself. As they say here " up to you".
it all boils down to the same rule. Don't complicate it more than they have. For the moment .it's 60 days, plus an option of extension 30 days more. If you want to stay longer, there are visas. It's not hard to understand. It is widely known/ accepted, that you can do this procedure twice. Which gives the person needing it 180 days.
I think that's quite generous.

I've done my 5 months in Thailand legally since 1984. Never once had a problem. Stick to the rules. It's not confusing until FB arrived and every Tom Dick and Harry spouts his version.
if you come in without a visa, you are a tourist. 60 days. You can prolong 30. If you abuse this, you will eventually get pulled up. The decision is always up to the immigration officer letting you in , or not.
no, each entry plus an extension to immigration= 90 days ( for most passports) x 2. That's really pushing it, and always up to the officer stamping you in.
