Hypothetical question here. Let’s say I’m in Thailand on a family visa (marriage) but my wife dies. Do I loose that visa?

no.. Permanent residence means you are allowed to continuously be here without a visa. There are requirements though to keep it.

Does Vietnam and the Philippines require a visa? I know Thailand requires the electronic landing card, anything else? If Vietnam and Philippines require visas or anything else how do you go about getting them. Thanks

If you're on an extension based on marriage to a Thai and your spouse dies, you'll be allowed to stay until your extension ends. But you will not be able to apply for a new extension based on that reason.
If however you get divorced, your extension ends the day the divorce is finalized.
If your paperwork (bank account etc.) is correct, you do not really get a "new visa" but extend your stay based on retirement on the visa you already have.
the Non-Imm visa becomes invalid upon entering Thailand. . . . . after this you live in Thailand on an "extended stay permit" and not on a non-existing visa
