Make a booking that you can pay directly to the property without using a debit card which is also cancelation free. Cancel it after you get the visa

Why are flights to Thailand being delayed or canceled so frequently?

Oh boy I was on the same flight as you. I called their call center and opened the ticket to use later this year and booked a non- direct flight with Scoot that transits in Singapore for the same day. It doesn't make sense to go this route but this one is much less luckily to be cancelled.
