It just has be min 65K baht transferred over sea for twelve consecutive months into you bank account and you can do this transactions yourself from your bank in US.

If you apply for a 90 days Non at home before you leave you can use your bank at home to verify your income. As you’re from the US and your embassy doesn’t offer to provide you a affidavit letter, you’ll need to bank 800K baht in your bank in Thailand within a month to apply for your first year extension of stay. After showing proof of twelve consecutive transactions over sea you can switch to the income method from your second year extension of stay and you don’t need any funds saved in your bank anymore.

So if you can meet the general requirement of being over 50 years old and a monthly income minimum 65K baht a month you can apply for a Non O in Thailand on a TM.87. You need at least 15 days left in your current stamp for to apply and you might get a 30 days extension at your local immigration as well.

Next time you’d like to spend 7 months in Thailand I would recommend that you apply for a six months tourist visa at home before you leave. Then your whole family is free to stay up to nine months if you do two fast border runs and get extensions at the immigration in Thailand.

You’re allowed to buy one way ticket. The restrictions are regarding people travelling without any visa on visa exemption or tourist visa without onward ticket. With Thai passport you don’t need any visa to Thailand and are excused from these restrictions.

I know an Agent in Pattaya. She charges 3500 baht for opening an account in Bangkok Bank on both tourist visa and visa exemption if you have minimum 15 days left on your current stamp. ATM card is 700 baht. No mandatory insurance unless you’re from China, Russia or India.

According to an agent I know you need to buy a one year insurance at 4900 baht if you’re from China, Russia or India anyway. Can be cancelled after one year.
