Because contract probably does not say remote work. Get a letter from employer stating that you are permitted to work from any country worldwide including Thailand

Yes u can but I would do in Hanoi as easier. Check out my Hanoi experience post that made few days ago for more info.

Mail a visa? No embassy mails visas. They either tell you to collect your passport on x day or send you the evisa. If that concerned why not split out the balance into another account just leaving the 500k showing? Or if you are that rich just get the Elite visa

well they accepted mine with Xe rate but thks concern. Im sure embassies dont use a SuperRich or the like rate to calculate balances they will use something like Xe as it is the proper rate.
