unless you have been in and out regularly in recent times in Thailand you are very unlikely to be asked for an exit ticket. I wouldn't stress too much be it it's something to keep in mind. Depending on what airline you're flying on may depend on if you are required one to fly but again it's less chance you'll have to worry

The fact it's a long trip and you'll likely be out of Thailand for quite a long time before re entering. I'd personally get a 60 day visa to start and get a 30 day extension and travel 90 days in Thailand first. If you were going in and out of Thailand regularly then the metv would have been perfect but I'm guessing you'll be many months in Cambodia, Vietnam and Laos so it would only make sense if you travelled 4 months in those 3 countries and re entering Thailand right at the end of the metv but I'm sure you'll want more time than 4 months in those other 3 giving the duration of your adventure.

So that's my advice. When re entering Thailand at the end just get a 30 day visa exempt. You can extend that for 30 days as well.

they recently approved my 60TR with a exit flight 150 days after entry. I submitted a letter explaining my extension and border run intentions and they approved it. However this has actually been a new option in Australia. Pre covid it was only a exit flight within the 60 days. So the Aussie embassy at the very least realised extensions and border runs were quite inside the rules and have allowed us to explain this intention. May not be the same in the UK though of course

I don't know what their rule is in the UK but recently in Australia, the Thai embassy has given the option of either a exit flight within the 60 days or a written explanation as to why you want to stay longer. It wasn't like this before covid. My last 60TR I submitted a exit flight exactly 150 days after my entry flight explaining I was going to do a 30 day extension and 2 border runs. They accepted that and approved my visa. However this is in Australia and written on the Australian embassy requirement list. The UK might be different so best you check
