because most Thais drink heavily sugared drinks loaded with artificial crap. I prefer to consume food and drinks that are natural, when possible.

yes, that’s true for a visa with retirement extension which is what I’m guessing you have. But the OP just wants to stay for 2 months as a tourist. That’s pretty simple.

what is there to know? The visa waiver for US citizens hasn’t changed in years, if it ever did. A simple trip to immigration will get him an extension. There are no entry requirements beyond showing proof of vaccination if asked.
