If you have an evisa, you'll need the printed copy for each entry you make, the 60 day stamp you have is correct.

If it is a single entry visa then it is already used.

You can keep the same "admitted until" stamp with a re-entry permit.

However, if your current stay has less than 30 days to run, leaving and returning will get you a 30 day visa exempt entry anyway.

You can enter any number of times up until the 2 April.

If you enter on 31 March then you will be given a 60 day entry, the visa expires on 2 April so that is it done, all you get is those 60 days.

If you travel without a visa and a flight out 59 days later the sticking point could be the UK check in staff, if you get past those then entering Thailand is unlikely to be an issue.
