A lot of embassies will accept first 3 nights of your stay. So full 60 days accommodation, not required.

It depends on the airline. It's them who ask. Thai immigration don't, normally. However, you need to show return or onward travel to get your TR60 visa.

Get an extension. Will save you money, and overstay stamp in your passport plus if the police stop you in those 5 days, jail & deportation.
