TLDR : Answer Summary
New Zealand citizens traveling to Chiangmai for 4 weeks in January 2024 can utilize a 30-day visa exemption, which is granted upon arrival. This can be extended for an additional 30 days for a fee of 1,900 baht. They will not be able to apply for an e-visa as New Zealand is not currently part of the e-visa program. If a longer stay is desired, they can opt for a tourist visa, allowing 60 days, which must be applied for in person or by posting documents to the Thai Embassy in Wellington.

The link is here, but New Zealand does not yet participate in the evisa program. Check again in November or December to see and if not by then you'll need to follow the process of the Thai embassy relevant to you.
