Go to a Thai consulate in Laos, Malaysia, Cambodia, etc. get another tourist visa.

No, at most a METV can get you nearly 9 months, if you do your last re-entry on or near the valid-until date and extend a final 30. But you could then go to a Thai consulate in neighbouring country (Laos, Malaysia, etc.) and apply for a single entry tourist visa, which if approved would get you another 60 days plus 30 extension.

For visa advice, best to state your nationality. For many (50 countries) the main options are: tourist visa 60 days + 30 day extension then go to another consulate and repeat (until they say "no") or enroll in an approved school to get an ED visa, or for longer term get non-immigrant visa (type-B with work permit for approved job, or type-O based on marriage to Thai or retirement age 50+ with proof of sufficient funds).

The "closer" option could be flying. Air Asia twice daily flights from U-Tapao airport to Udon Thani for around 800 baht. Then transfer to Nong Khai, bridge and Vientiane.

Myanmar (Yangon) would be another option

Go to the nearest Thai consulate (in Malaysia, Laos, Cambodia, etc.) and get a single entry tourist visa. That gets you 60 days and can be extended 30 days more at any immigration office. Six-month multiple entry tourist visa can only be obtained in your home country.

Take a train from Surat Thani to Butterworth (Malaysia) then quick ferry to Penang.

To stay longer (legally) you need a non-immigrant or ED visa based on marriage to Thai, retirement over age 50, enrollment at a school, qualified job or volunteer work. Otherwise play the visa run game by doing multiple visits to borders and Thai consulates. That might get you 2 more years until the red stamp of denial.
