if we come in on a 60 tourist visa but we have a round trip ticket for 90 days, is it okay to book a ticket out of Thailand only one way and not use it or book somewhere for a few days and return to Thailand again?

we are planning to come from Canada in Jan and would like to stay 90 days. Can we get the 60 day tourist visa and a 30 day extension but book our flight for the 90 days? Then have another ticket showing us leaving the country and coming back in? I don't want to book the ticket for 60 days and change it later because by that time it's more expensive and harder to get a flight back. Thanks!

Thank you for all the information. It's been very helpful. We have our tickets booked to return in 2 months but is it okay if we change them now to return in 3 months even though we are entering on a 2 month tourist visa?
