As mentioned above, these 7 days aren't an extension. They are some piss-off days to leaves the country, including a big piss-off stamp to your passport.

the 7 days you're talking about, that's not an extension. You get 7 days time to piss-off, in case your application has been rejected. An extension of stay for TR and Visa exempt (if you're eligible to enter with it) is always 30 days.

7 days Quarantine only if you come from a high risk country and of course you have to stay in room all the time.

What happens if my visa expires during a public holiday in Thailand and I can't renew until the next business day?

It's up to the officer. 500,- thb overstay per day or maybe no fine because of holiday. Your extension should not be effected.
