I would go back at least 6 months if you have it. Just makes things smoother but if not submit what you have. Every Embassy has been different. Some just want to see the balance, some 1 month, some 3 months, some 6... I recommend to people I'm helping submit everything they ask for and plenty of it to just make it smoother.. Hope this helps.
DTV is just an extended tourist visa, nothing more. You really don't get much for it. Don't get me wrong, it's awesome, I got one but they are just looking to allow digital nomads to come in and spend money in their economy which they need. Plus the Visa fees are helping them.
That letter has be 6 months old or newer. Something from 2020 will not work but if you are the owner, you can just write a letter stating you can work from anywhere remotely and sign it. I own my own company and did this and got approved. I would highly recommend you include this. Hope this helps
Can't be an address in Thailand. So either use Australian Address, you'll need to upload proof of the address like a lease, mortgage, utility. You can upload a bill from the hotel possibly and put Vietnam as your current address. They have switched to eVisa online only from what I've heard...
