A 1 year multiple Non O gives you 1 year right to enter Thailand but every time you enter you get only 90 days right to stay. Thats the way you started. If you did not leave when the 90 days where over then you overstay. Even being in a hospital with major surgery doesnt give you a right to ignore that. If you are not able your caretaker, sometimes the hospital, can request a medical extension.
Normaly I would get a new passport prior to renew the extention of stay. But knowing the long que waiting to get a new UK passport i guess its to late already.
Last week a guy now staying in Bangkok was send away at immigration Bangkok because his previous Covid extention was from Phuket. They told him to reapply there. If you have a TM30 stating Pattaya and your previous extention was in Pattaya i guess you better go to Pattaya.
Did you ever read what will happem if the police stop you for anything and find out you are overstaying? You might go to a immigration detention facility. This is not a place you want to be.
Or buy at least a single re entry directly after your extension. In most cases its only 30 minutes extra at the immigration. I never leave the immigration office withour a valid re-entry permit.
The OA is a good option if you not want to extend it in Thailand and accept to apply for a new OA in your country every time it is expired. The financial demands are then to show from your country instead of on a Thai Bank Full health insurance is still demanded.
