You can’t obtain a METV from Laos unless you have residency or are a Laotian national. Apart from your home country, Australia is the only place this Visa is available.
If attempting to enter the Kingdom on a Visa exemption, it’s always been a legal requirement to have booked travel arrangements leaving the Kingdom within the validity period of the exemption (30) days. It’s also a requirement to have 10,000 baht in cash or foreign equivelent, & booked accomodation for the first few days. You may never be asked, but they are lawful requirements none the less.

Possibly depending on what countries they are from, they will however been linked, so you won’t be able to bounce between the two in order to spend longer in Thailand, unless of course one of those passports is Thai.
If your kids are in school on Education Visa’s you can apply for an extension of stay based on guardianship. The school should supply the relevant paperwork. 500,000bht needs to be ‘seasoned’ per application per year, on top of any school fees. More senior members will have more specific information.
