Don't be so surprised. They have been asking this stuff from everyone (at least in the US). Tax returns, pay slips, location proof are just some of the things they have been asking for in addition to the required documents. Its a bureaucratic thing, but pretty straightforward:
1. Show them the articles of incorporation for your company. If you dont have one, just tell them you're a sole proprietorship.
2. Just have a letter on your company letterhead stating your position in the company and other details they want and sign it yourself. Everyone has done this.
First of all, I would refrain from accusing them of "stringing" you along. You are immigrating to their country and they are free to request as many documents from you. Why didn't you just extend your stay until the process was complete? I've not heard it taking more than 4-5 weeks tops. FYI the consuate website does mention that every docuemnt request takes 3-5 days to review and changes the timeline.
I doubt it….not planning ahead on your part is not grounds for an expedited process on their end….an urgent medical appointment or something sounds much better and might work
