You need 2 visas. A schengen issued by Spain and an UK visa. Bear in mind that usual rules may be suspended right now. For example the only people allowed into Spain now are spanish/andorran nationals or residents - no visitors. The few exceptions to this will be diplomats, medical staff etc.

no. You need a COE to enter Thailand. My Thai partner needed one. Those on visa exemption will still need a COE despite not travelling on a visa.
