An other option is to simply alternate between countries. I have a few friends in your position and the more strict behaviour in regards to the visa exempt entries made them experience (and enjoy) other countries in the region.

Late December to late February... Depends if i decide to do some biking in Vietnam... I currently have a flight for December 27 but will probably change it

Requirements are quite straight forward and easy to fulfill... 😉 (just wondering on extra servings of 'stuff' from staff that we might experience in other parts of the world... glad to know all is normal). I'm traveling through California and have no intention of going to LA during the rest of my trip here. Remarkable that there's no office in SF.

Yes, of course. It just depends on the industry. The hotel and restaurant industry for exemple is opened to people without degrees.

To get a visa, anywhere, you have to go to the consulate. When there's no consulate, there's a consular desk at the embassy. Embassies are for country to country affairs, while consulars are for country to individuals.
