What is the best way to extend my stay in Thailand while in Koh Samui?

Just do a border bounce with one of the agencies in Maenam. Cost is around 4500 baht. They will check your paperwork before you book and it’s guaranteed visa for 60 days which you can extend for an additional 30 days on samui. Super easy just means a full day in a van.

There are agents in Pattaya offering the DTV for 100k thai baht approx. You only need passport and photos but you have to go to Laos to get the visa. Could be a good option for you.

Thailand probably treated tourists / expats the best during covoid. Also after covoid they were the first country in Asia to do quarantines and sandbox experiment. When it comes to Asian tourism nobody can compete with Thailand.

they have two agents that organise trips as far as I know. The visa trips costs 4500 baht and you leave samui super early in the morning, 5 am pick up and return 7 or 8pm. It’s a long day. Be aware samui is rainy season November and December not the best time to move there.
