we booked a private tour to Vietnam through Laughing Roo Travel. We were a group of 10 and they applied for our visas. Didn’t feel like any hassles on arrival. You could try them.

I have travel insurance. I am covered by my local bank HSBC. Will they accept that or does it have to be their insurance?

I always fly Emirates. Book online or look for your local agent and book over the phone.

What was your experience with the Thai Pass and visa approval process?

Emirates insurance is valid from departure till return up to 365 days. Emirates are only offering this free automatic cover to all ticket purchases till end Nov. 2021. After that you have to buy insurance. You have to apply to Emirates AIG to get individual insurance certificates to upload for Thai Pass.
