you can use most cameras to scan a document or download an app like simple scanner, I do it all the time and it's quite easy to attach the documents. Just takes a bit of practice like anything. I'm not suggesting this for an older person, but for the majority or a helper.

so why Mary, if your a teacher you have the best chance to work in Thailand. I don't get it, you married a thai why, find a solution not a reason not to. You dont have to be rich to be happy. If legit people can get a visa, just have to tick all the boxes. Not sure why people want to marry a thai and move them, my reasoning would be to be in Thailand.

only problem with telling DWP and giving your account is, don't they freeze the yearly increase! I know they did to friends in France a few years back. I'd get paid in the UK and handle my own affairs

I pay tax on my pensions in the UK, depends on income like everywhere else.

Interest earned in Thailand would be taxable same as elsewhere

he isn't working in Thailand in theory, he is working remotely for another country and being paid in that country, many people doing this.
