first of all. . you told the IO you wanted to stay 60 days. You did not have a visa to do that. So that's most likely the problem. Nothing to do with not liking tourists.
when you arrived you hadn't already checked in to hotel/ accomodation so wouldn't have a TM30. Arrival Immigration wouldn't ask for this. You're now asking about going to an immigration office to extend stay, different thing to arriving.
I also struggled with some online stuff and uploads. I often have to get a bit of help. I was just surprised his computer savvy teacher couldn't upload stuff on the application.
entering Thailand for a holiday as UK citizen is not difficult: no visa required for 30 days and can extend for an extra 30 days. Unlike trying to enter UK for a holiday as a Thai which is not so easy.
