nobody will force you to do anything. If you leave at the end of 90 days without applying for an extension the Non O is finished, history.

What visa options are available for me and my son as a self-employed individual in Thailand?

If you are a low income person have a serious think about your plans. As non Thai your son will not qualify for free education so you will have to pay for private international schools. Health care is not free in Thailand, while outpatient care is inexpensive, if you need hospitalization it can be cripplingly expensive.

not quite correct the Bank letter is valid for 7 days and the statement can be for any day as long as it shows 12 months deposits.
