There is no income requirements. But many freelancers or remote workers have used pay slip deposits etc to show a viable and true employee employer relationship.

You don't have a choice, an embassy is either e-visa application or in person. You can choose the embassy but not the method. Typically the embassy website will state approximate wait times for processing.
