Buy plane ticket out of Thailand, then when you want to return meet all the requirements to get a COE, then get on the plane back.

Can I extend my Visa Exempt Entry beyond 30 days while in Thailand?

Only if the unable to travel due to covid extension is still available. Otherwise you'll need a proper visa.

The easiest way to prolong your stay is to get a tourist visa before entering Thailand, this is for 60 days instead of the 30 days the visa exemption gives you.

yes, then if the 60 day option for having a Thai family is available then it avoids the need to apply for the non-O. I'm not sure on the 60 day option here so will leave someone with more knowledge than me explain.

Alternatively, visa exempt for 30 days then apply for the non-O in Thailand to give 120 days

tourist visa will give you 60 days plus you can then get a 30 day extension in Thailand for 1,900 baht.
