are you trying to live in Thailand on a visa exempt? I've entered 5 or 6 times and not had any issues but it's clear I'm not living in Thailand

No limit by air but if immigration think you're trying to live in Thailand without the proper visa then there's a much stronger chance of you being pulled over and eventually denied entry compared to a genuine tourist who may come in and out a lot.

To take my case as an example, I've entered Thailand by air 5 or 6 times this year. My longest stay has been a week. Occasionally I get asked when I'm leaving but that's it.

evisa - visa on arrival not available unless you use an agent to obtain it for you at a much higher cost.

USD 25 for single entry or USD 50, I believe, for multi entry 90 days.

If they're two separate tickets and you're an Australian national then you're not boarding the plane to Vietnam as you need an e-visa.

I'm just letting the OP know what the rules are for Vietnam.

Vietnam taxes on worldwide income, exactly the same as what Thailand is proposing. Cambodia too although I understand their whole concept of tax is somewhat strange.
