 answer will be official - you should have return ticket in 60 days. In reality it usually didn't ask. Also author can book any ticket from Thailand, bus or ferry.

Better to have a valid visa for kids, for some cases this can be important. But in general kids can enter on visa exemption and then overstay.

 on Koh Phangan after COVID they did extensions 30 days before, but later only week when were full and managed to prioritize query

But site still asks for job and income and email, and some other staff that kids can't have.

 that only their good will. Norway made it 10k in equivalent. And this is what they can control... Not extension fee :)
