Just as a brief update. I never got any official channels to respond to my queries. We ended up deciding to just wait for the new passport to come in. :)
All the info pertaining to that decision is a bit long winded and has a lot of unrelated factors, but the tldr version is: I get different information with every resource I read. I don't KNOW that they do require 2 blank pages, I've only heard that it COULD be the case, thus the reason I've asked for other people's experiences with it. I've contacted the consulate directly, but it's been a long holiday weekend so I have to wait for their response. And it's not really that it's last minute either, we'd just prefer to wait the two weeks exploring Cambodia instead of sitting in BKK where we are already familiar, using our time more constructively.
Thanks for the input. Luckily the passport is still valid for two years, so that's not an issue. It has more to do with the blank pages left. I am aware of and understand the heightened restrictions on visas in Thailand, but I'm unfamiliar with subtle rules that may be employed in Cambodia and couldn't find an official answer on Cambodian government websites to my particular question, so I thought I'd ask for the experiences of others in this group.
Thanks for the input. We're planning on getting him a new passport before extending anything if we decide to stay more long term. As far as I know, one can only get a 6mo-1yr extension on E-type visas and only if one has a work permit. The passport page issue should be sorted out before we get to that step.
We're researching Cambodia for living, so we need to go there specifically. I have the info on the e-visa, but the lack of 2 full blank pages is my concern atm. I've heard Cambodian officials can be sticklers about it.
