That is the 180 reminded to border hop or go to immigration and pay 1900baht for an extension for 180 days. I believe your visa is valid you just need to leave the country and renter. Basically you need to leave Thailand 2 times per years for atleast 6 days out of country

You pay 500 baht per day and you get an overstay stamp on you passport. If you return to Thailand they may question you for coming back. As for leaving they may ask you the reason. You can tell them you missed a day or you could say you were sick. But they will document it

I recommend Meesuk Travel. They will meet you at 5am and you will be back in Bangkok by 4pm. They will take you to Cambodia. Super simple and easy. They take care of the paper work. You walk through 4 gates and it takes about 35 minutes and you drive back

Does a Non-O visa start upon entry into Thailand, and is an onward ticket necessary?

Fly direct. Option is to not book and they may allow you in cause of visa.

Option 2 is book a fake ticket on one of those sites for like $12usd and it will create a airline ticket.

Option 3 book a cheap ticket to Malaysia for around $40-70usd.
