My experience with Luma insurance was outstanding. I thankfully never needed to make a claim. Time it took to buy their insurance and receive a policy was less than 24 hours.

Rent the UK house and buy insurance for that purpose, if your able to do that with your current financial situation.

Two day over shouldn't be a big deal. I've done it myself and it's had no affect on my getting visas or entering Thailand. Just don't get picked up while on an overstay.

Does the Canadian consulate in Chiang Mai issue statements of pension income for Non-Imm "O" visa applications?

I've done it via email through the Bangkok Embassy and they mail you the letter. However, the Hua Hin immigration requires a stamp from Thai foreign affairs which is also located in Bangkok.
