If you are American you can get visa on arrival in Thailand. Good for 30 days. And can extend another 30.

Yes. But if you are going to be coming and going it's better to not have overstays on your passport. If you have to many they may deny you entry at some point.

They don't care. You need to be out by the date stamped in your passport or you will be fined for overstay. Book a new flight.
