The Cardiff Embassy should have guidelines about the paperwork needed for the visa. Email that to the school in Thailand they can run through it. Im going to do one at Hull in the next fews week, the school are sending over the docs for the people at Hull to look at. The Hull embassy needs a letter in English this contains start dates and arrival dates so you need to let the school know when you will be arriving in Thailand and when you want to start the course etc.
Yes 10 days you have to wait if you cancel and if you dont show its 30 days before you can make another appointment. I found out the hard way. You wont be able to log in.
Heres what I needed to cancel my Non B earlier this year. I needed tax records swell as a letter from my employer. Maybe you can show your school this. I was given this at immigration In Bangkok.
Yes as stated above it can take a while to get all the documents together especially if they haven't prepared the docs before. 30 days wont be long enough. You need police checks for teaching jobs, from home and Thailand and degrees certified. It can be a long process.
Give them a ring they are pretty helpful. The flight you can just book a flight out of Thailand before the 60 days thats what they are looking for. Buy a cheap Throw away ticket out of Thailand or if your leaving before 60 days to go somewhere else use that ticket. Take photocopies of everything they ask and you should be good.
I had 2 tourist visas I got a blue stamp after the first tourist visa. Also one land crossing and extension while waiting for documents. I had been on a non b Visa for about 13 months before that. It's a language school in BKK no real problems with other applicants. I found out later that they are looking at the length of time your are in Thailand even if your on the right visa before hand. I got a blue stamp after 1 tourist visa and everytime they point to it and I try to explain but they don't listen. Wrong place wrong time. I have friends with

tourist visas and then got a ED visa no problems. I think alot had to do with new rules and the new appointment system being brought in, alot of people from Vientiane went to Savannakhet around the time. I ve heard its a lot easier at Kota Bharu. My school have been sending people there and had success. Good luck.
I was denied an ED visa a few months back in Vientiane, nothing was put in my passport and documents were given back. They said due to my history in Thailand.
