First of all, I'm sorry that you had this experience. Immigration seems to be the one thing that I consistently dislike about Thailand. I found that I was treated very poorly when I lived in Pattaya at immigration between the years of 2021-2023.
As others have mentioned, you did everything right here. Unfortunately, every country has people on power trips, especially when they are in authoritative positions.
I truly love this country, especially the people but I do agree that immigration is not fun to deal with. I'm not really sure what to do and am wondering if there's much (or anything) tourists or expats can do to improve the process. Would love to hear ideas from others.
I know that every situation is different based on responses from this group but I have multiple accounts and simply moved the required amount to one account over the course of a couple of days and sent that document and it was approved for me with no further questions asked from immigration. Although my one bank was wondering wtf was going on and froze my account until I explained to them what I was doing.

I just transferred a bunch of my money from different accounts into the same account a few days prior. I called the embassy and they said everything was fine. Applied and got accepted within a few hours. A couple of things to note: I've had 2 prior visas with thailand and this was in Canada. It seems that everyone has different experiences so it's a good idea to call the embassy as others have suggested. I would've been rejected with my professional portfolio without their help but they asked me to send an email and they said it would work. Sure enough it did.
Appreciate the post. Wish I could help but haven't gotten to that point yet myself. Hopefully by commenting on this it will increase visibility and maybe someone else can offer some advice.
