that's immigration rules not police. Look up what happens if police catch you on overstay.

Funny how many people have said not get caught by police but obviously you know better than all of us :)

wrong if you are stopped before you go to immigration you can be arrested it happens

On overstay you get stopped by police it's jail not just a fine. 7 days over you might not get an extension no guarantee now.

Did you book your flights quoting old passport number ? If yes make sure you take old and new passport with you to check-in they may ask for it.

all entry depends on the Immigration officer your standing in front of when you arrive. Thailand does not have any restriction on how many times you fly into Thailand. The 2 entries by land was lifted when they started offering the 60 days exempt instead of the 30 days.
