You should be picked up from the airport by the hotel , straight to the hospital then to the hotel where you stay in your room until you get your test result

Does Thai pass insurance need to explicitly mention COVID and $50,000 coverage?

I would play safe and get a Thai approved insurance like AXA some travel insurance companies only cover you in the case of showing symptoms not just a positive test. Fine print is everything. Also if staying for 2 weeks get insurance for 1 month to be safe

 Airline price was too good to ignore . At time of booking $300 AUD return today i looked and it was $600 return

How soon should I apply for the Thai Pass and do I need to wait for my visa approval?

 you can only apply no sooner than 60 days before you arrive and it is valid to the date you arrive so technically at most 60 days
