I can only answer to the part of your question, that is - you absolutely can re-enter via the airport with help from “the fast track services” (this is not the same fast track they sell in the airport but I think you know this). It costs an extra ~100USD for Bangkok airports.
I don’t remember if we are allowed to reference specific agencies in this group so you’ll have to do your own research 😅 (I can say that I used the help of the same agency that organized borders to Cambodia, now they changed the direction and go to Laos.
The thing is - they sometimes fail, and if staying undetected is crucial for you, you might want to follow Brandon’s advice.
From my own experience: I used NordVPN, which has a “kill switch” feature that’s supposed to cut your internet connection if the VPN drops, to avoid even a small chance of your real location being exposed. But… it failed me 🤣
In my case, it wasn’t anything serious - I just got blocked from online banking and had to talk to support. But I learned my lesson 😅

Your pets don't require a visa 😅 They do require a typical package of documents for an international travel (+ all the vaccinations done in time).
The only problem with pets here is that many condos and businesses aren't pet-friendly. Even parks in Bangkok are not pet-friendly (there are a few pet zones bu they are relatively small). With two pets, you might need to look into renting a house instead of a condo.
most likely you will be questioned by the airline, not Immigration. You could book a flight via onwardtickets or some similar service for a small fee (which is just a booking not a real ticket), or book a more expensive ticket but fully refundable (you might get the refund in a few weeks time though).
This is what people typically do when they need to show their tickets out of Thailand but they haven't made any plans yet.

For now, I think “19 degrees” (19 องศาเหนือ) is my favorite local brand with several light roasted types of beans available. It’s relatively inexpensive too 😁 You guys might give them a try, they sell on Shopee too 😊
