- So I could apply for a new extension based on employment from the new employer, with an immigration office which is in another city? For example, new job is in Chiang Mai, but get the new extension from an immigration office outside Chiang Mai?

I read somewhere it "might" be asked for.

Inside the consulate they have a sheet of paper (on the window) with addresses for those who need copies/dollars/photos etc at the last moment in case that's really necessary.

At my university this is the rule too. You are supposed to cancel your visa within a month after your last class.
