This is not entirely true. UK does not need a visa to enter Vietnam. Its easy to check which countries do on the embassy website.

What documents should I provide for my DTV application as a self-employed contractors?

I don't think they accept investments. You need the liquid cash in your bank account - if it's in there, then that's all they need but if it's also in investment accounts combined with your bank account to equal 500k baht, then that is probably the problem.
