As others have said it’s not Thai immigration that’s the issue, it’s boarding at your departure airport without a visa. Usually a return ticket is required as the airline gets fined for allowing passengers on without required paperwork (visa or return ticket). No a hotel booking won’t suffice. Land crossing ticket might, depending on the country. If it was me I’d just buy a cheap AirAsia ticket somewhere (KL?). It can be less than $50.
It depends on many things- especially your departure airport. For eg in 12 years of travel (once or twice every year) to Thailand from UK I’ve ALWAYS been asked about return flight ticket if I didn’t have a visa.
It really depends where you are - in most 'tourist' areas you can use Wise ok in many places but some will charge you 3% for using card (Wise doesn't charge). The more local/rural the harder it becomes and cash or QR code is required. Another issue is if you get a fraud block on your Wise card you've got a big problem as they won't deliver a new one to Thailand. Suggest maybe having at least 3 usable cards (Wise/Revolt etc) if you plan to be in Thailand long term. There are also online banks like Monzo that offer the same, depending on your residency. If you want to open a Thai Bank Account use an agent. Apparently Pattaya has the cheapest.
I had the same problem when I applied for a METV a while back. They said that statements from savings accounts were not valid. I got round it by transferring the required amount into my current account for a few months so it showed both transactions and overall balance.
