you need concrete evidence of how you operate your business.

Business/company registration/ownership details if you operate that way.

GST details, if you're registered.

If you operate as a sole proprietor, you would provide sample invoices along with bank statements showing receipt of payment. A tax return would help.

The covering letter just explains to them how your personal situation works. It is not evidence in itself.

It's more about proving you are legitimately engaged in offshore employment or business. It has nothing to do with how much you earn.

exactly this! They're not so much concerned about how much income is coming in. They require concrete evidence that the visa applicant is engaged in legitimate business outside of Thailand.

That is either proof of employment, proof of offshore company/business ownership and/or contracts/agreements with an offshore client base.

what are you asking?

You mention 2 separate things.

The visa fee is one thing and is paid for in the currency where you are applying.

The proof of funds (50,000 baht) is a different thing and should be ok in any currency, so long as the bank statement (proof) is in English or Thai.

I'm not sure why you mention jewelry, but you cannot pay for either with jewelry!

once you are in Thailand, you can look for visa agent companies. Most of those can help with opening a Thai bank account.

It is possible to get a bank account by yourself, but apparently it is not so easy. Getting help to open account is not necessarily 'dodgy' at all. In many countries these days, banks are nervous about newcomers, because of the fear of being involved with money laundering, or similar. An agent that the bank knows and trusts can help greatly with the process.

DTV is simply a more liberal tourist visa. You're not actually 'living' in Thailand, as such.

There are other ways to get a bank account though...

It's easy enough to register a company in the UK and many other places too...
