You can get your 30 day extension stamped in 2 weeks before your date. 1900b

From the following day, you would be able to apply for the 60 day covid extension until @ 1900b. First given an under consideration stamp, and then you return for the full extension stamp.

NB, most Immigration offices have more paperwork requirements for the covid extension. Clarify this when you visit for your initial 30 days.

Both stamps should be extended from your expiry date, not the date you apply

I'm not talking about getting in to Thailand. I'm talking about getting to the airport and out of the UK. Updates to UK rules last week has international travel banned for holidays.

then you are in a better place to understand if you can get to the airport and manage to board and fly than anyone in Thailand. Speak to your airline would be my advice.
