To be honest, it's not clear, plan for quarantine and make sure your insurance will pay for it, as you are aware of it before travelling

What paperwork do I need to open a bank account in Thailand on a retirement visa?

I opened an account a couple of months ago, on a tourist visa. Yes it's a roll of the dice, as others above have said and you can stack the odds in your favour. Using the head office with English speaking staff available, certainly helped, Bangkok Bank.

Can I just bring cash to immigration to prove my finances in Thailand?

When travelling across the border you may be asked to show the equivalent of B

cash. This is more of a land border thing. Generally, entering by air, they don't ask.

If applying for various visas at the immigration office and needing to show proof, that money needs to be banked in a bank account.
