If your able to come to an agreement with your wife without going through the courts / lawyers etc, its simply a trip to the Amphur with relevant documents, marriage certificate etc and it can be done same day, mine cost about 100baht 8 years ago.
The 1000baht single entry tourist visa, is that 60days? I've never done a visa run to Laos, can the 90day non-ed visa be processed same day or would I need to stay in Laos for a period of time? I had been considering doing the visa run to Cambodia or possibly Singapore, I assume same facilities available elsewhere?
I looked at my previous policy, it only mentioned the 3.5m thb covid cover and that's all immigration were concerned with. I got my visa extension today using the FWD policy. Regarding the benefits of other policies, I don't expect to make any insurance claims, I've had covid already and if I have an accident it would probably be doing an activity not covered by insurance. For me the insurance policy was purely to get the visa extension which it did.
