For Chiang Mai you can go upstairs and get the actual receipt after you file. No need to show anything. Just passport

That comes in handy when you travel and return so you don’t need to trouble your landlord

The requirements should be all listed there but if they do request a statement like other consulates any printout showing the balance and your name is sufficient.

Vientiane does not ask for anything other than the paperwork from the school.

It’s also documented on their site that it’s not a requirement for ED

You usually can’t stay out for that long on an ED visa unless it’s an emergency. Check with your school first and they will give you advice on how long you are allowed to travel outside for.
