I'm not sure about Sheraton but Mandarin Oriental and Shangri la have their own boats to drop you and pick you up. There is also a free shuttle boat from under Saphan Taksin BTS station directly to icon Siam and there is an Orange flag boat that stops at icon Siam and makes a stop a bit further up the road.

If your phone was provided as part of a plan with a carrier for a fixed term it will be locked and unable to use local SIM cards. If the contract is finished you can call to ask them if it's unlocked. It's a simple process. Thailand uses the same SIM cards and esims as most of the world.

If you are looking for fabric jackets (wool, cotton etc) then the tailor shops are the ones to avoid as they act as the middle men. They send your order off to the factories who do the manufacturing. They aren't so much on Google. But they are hidden in plain sight. If you are around Sathorn there are a few shops that make all the uniforms for the police etc and they are located at chareon Krung soi 57. You have to go into the side alley to find them. It's best if you have a Thai friend help you to find the fabric factories.

Nothing. Your coming for a week. Don't overthink it. They might question your sanity by staying in the Philippines for a month and Thailand only 1 week.

I don't see a particular issue. You aren't staying long and your not spending all your time here. Even if they ask you questions I think telling the truth that you are visiting your love interest is more than satisfactory. You don't stay long enough to have any reason to apply for a tourist visa.

if it's already past 90 days overstay you will receive most likely receive a ban. It's the law. Mistakes do happen, that's why they allow the 90 day allowance, beyond that it's just down to you. Thailand clearly isn't the place for you, it's probably best to move on to somewhere else. They will allow you to leave freely if you surrender at departure immigration and pay the fine. If you are caught by the police within Thailand or you do not pay the overstay fine on the way out, there may be more severe consequences.

Ok there's only one thing you can do. That is to surrender to immigration at departure. Chaeng Wattana won't be interested in dealing with you. You will have to pay 500 baht per day until a maximum of 20,000 baht. If under 90 days of overstay and you pay the penalty you will receive a black stamp in your passport notifying of your overstay and that you paid the penalty. Doesn't matter where your departure is to. You will be able to return to Thailand but I'm sure they will expect you to get a proper visa before returning if it's under 90 days of overstay. If over 90 days overstay you will probably revive a 1 year ban. Again nothing you can do. If you pay the fine they will allow you to leave the country and you will be entitled to come back after the ban period. If you don't pay the fine then it can become a criminal offence. You cannot bribe immigration or use agents for this purpose. There is only 1 way to deal with this.

Easy solution is to go to Superrich. Change GBP to THB. Then take the Baht to change to Dollars. The rate differences are minimal for small sums of money.
