How much should I budget for living costs in Chiang Mai, Thailand for my wife and me?

My old man lived extremely comfortable and socially on 40,000B P/M.

He also saved and did quite some travel back here to Oz and various parts of south east Asia.

If you can control your spending it’s more than affordable to live in the Kingdom.
