More than 6 months on exemption visa and you have a very good chance of being questioned at immigration. The retirement visa would be your best bet

Carry on luggage no problem, collection of bag can take ages. Last time I flew in with Qatar, it took over an hour for my bags to arrive

You have to pay for card etc, normally 500 ish. Agent is probably the best way to go, a lot cheaper than the 7000 you were quoted

You could go over a boarder and apply for a 60 day tourist visa. Probably the best way. Should of done it last time you left

 go bank to bank or use an agency. Just check on the upper limit on transfers as some banks are 50,000 max

Better off getting 60 day multi tourist visa before traveling, you can extend d for 30days in country. Then you can do a boarder run and repeat

What are the best options for carrying money to Thailand without incurring high fees?

As far as I know more than 10K you need paperwork to prove your not laundering going out of the uk and into Thailand. You could take x amount of cash and use a revolution card to pay for hotels, transport etc
